The end of Edo period (late 19th century), it was the time when Gihei, the founder of Kiuchi Brewery has started brewing KIKUSAKARI sake.
The very first flavorful drip was created with the rice grown and harvested in the fertile land and the purest spring water, together with his care & passion for brewing.
The legacy is the family heirlooms, to be sustained and passed on to the future.

Sake is brewed with a unique fermentation process called "multiple parallel fermentation" where Saccharification and alcohol fermentation occur at the same time.
