Hitachino Nest is famous for its sophisticated, well-balanced beer brewed based on substantial backbone of Kiuchi family's heritage.
Established in 1823, Kiuchi is known as a premium Japanese sake brewery, and our passion and craft have been passed down within our family for eight generations.
The core ingredients of sake are simply rice and water, however its brewing method is delicately complex and requires meticulous care throughout the process.
We believe such heritage and brewing precision created Hitachino Nest Beer, a special brew.
THE ART OF CRAFT - PILOT BREWERY
OUR PILOT BREW HOUSE
The main brewery was moved to the Nukada site in 2008, and now we produce over 8,000 barrels per year.
A 600 litre Pilot Beraplan Brewery System was installed at the former brewing site.
This small brewery allows our passionate brewer to trial new, experimental flavours with special ingredients and create another magical recipe using the traditional German decoction-mashing method.

REVIVAL OF JAPANESE BARLEY
Kaneko Golden, the key ingredient for HITACHINO NEST BEER NIPPONIA is a barley strain which was originally developed in Japan 180 years ago. The barley had slowly disappeared from the market when cheaper alternatives were introduced from U.S. after the WW2.
In 2004, we obtained 16 seeds of Kaneko Golden from the Department of Agricultural History in Japan and started the revival project with the local association of young farmers’. After 5 years of great efforts, we succeeded in reviving this long-lost Japanese brewing staple back to life.
UNIQUELY INTERESTING INGREDIENTS - WE MAKE THEM WORK
The main ingredients of beer are malts, hops, yeast and water. And what makes beers interesting - are unconventional, special ingredients which meld their flavours to create beer alchemy. We, curious brewer of course love to use unique ingredients for our creations. Red rice, coffee, orange and spices... we carefully select quality, sustainable ingredients sourced and grown locally. Thanks to our beautiful natural surroundings which gift us all we need to create another magical brew.
Ancient Red Rice 古代米朝紫
Hitachino’s one and only unique RED RICE ALE is brewed with Asamurasaki red rice cultivated in the local area near our brewery.
This beer has beautiful hazy pink colour and strawberry like sweet notes. To maximise these characteristics we use the bran of the rice which is the source of the colour and aroma, and even better is that they are rich in Anthocyanin which act as powerful antioxidant.
Fukure Mikan 福来みかん
This rare orange is called Fukure Mikan, the original species of Japanese mandarin which was recorded in Fudoki manuscripts (ancient records of the culture and geography of Japan edited in 713), indigenous to Mt. Tsukuba.
We harvest them every autumn and use for our HITACHINO NEST BEER DAi DAi IPA. We brew with as subtle hop as possible to enhance the delicate refreshing citrus aroma of this little orange.
